    Start by gathering all the ingredients. Dice the cooked chicken breast, red bell pepper, and chop the green onions and cilantro.

    In a small bowl, combine salt, black pepper, and ground cumin. Set aside.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell pepper and cook for about 3-4 minutes until softened. Add the chopped green onions and cook for an additional 1-2 minutes.

    Add the diced cooked chicken to the skillet, sprinkle the seasoning mixture over it, and stir to combine. Cook for another 2-3 minutes until the chicken is heated through.
