    Activate the Yeast

    In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle the active dry yeast (2.25 tsp) over the top and let it sit for 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Pour in the activated yeast mixture along with melted unsalted butter (4 tbsp). Stir until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm area for about 1 hour or until it doubles in size.

Baking Soda Bath

    Prepare the Bath

    In a large pot, bring 10 cups of water to a boil. Once boiling, carefully stir in baking soda (2 tbsp) until dissolved. Remove from heat and set aside.

    Shape the Dough

    After the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into small pieces (about 1 inch each) and roll them into balls.

    Boil the Bites

    Preheat your oven to 450°F (232°C). Working in batches, carefully drop the pretzel balls into the baking soda bath for about 30 seconds. Remove with a slotted spoon and place on a greased baking sheet.
