Method

Prep the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the mixture, ensuring they are well-coated. Let them marinate for at least 30 minutes in the refrigerator.

Prepare the Vegetables

  1. 2

    Chop the Vegetables

While the salmon is marinating, wash and slice the zucchini into rounds, chop the bell pepper into strips, and trim the ends of the asparagus.

  2. 3

    Season the Vegetables

In a separate bowl, toss the chopped vegetables with olive oil, salt, and black pepper to ensure even coating.

Grill the Salmon

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 5

    Grill the Salmon

Remove the salmon fillets from the marinade and place them on the grill. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.

Grill the Vegetables

  1. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill or in a grill basket. Grill for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.

Serve

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, plate the grilled salmon alongside the seasonal vegetables. Serve with lemon wedges if desired.
