Preparation of Calamari

Clean the Calamari
If not pre-cleaned, rinse the calamari under cold water, remove the tentacles, and slice the bodies into rings.

Prepare the Breading
In a bowl, mix together all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Set aside.

Coat the Calamari
Dip each calamari ring into the wet mixture, then dredge in the flour mixture until fully coated. Set aside on a wire rack.
Cooking the Calamari

Heat the Oil
In a large, heavy pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels. Sprinkle with additional salt if desired.

Add the Tomatoes and Spices
Stir in the crushed tomatoes, dried oregano, salt, black pepper, and sugar. Simmer for 15-20 minutes, stirring occasionally.

Finish the Sauce
Add fresh basil leaves to the sauce, stir well, and simmer for an additional 5 minutes.
