Preparation of the Chocolate Lava Cake

    Preheat the Oven

    Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together in a microwave in 30-second intervals or using a double boiler until smooth. Stir to combine and let it cool slightly.

    Mix Sugar, Eggs, and Vanilla

    In a separate bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly to combine. Be careful not to cook the eggs.

    Add Flour and Salt

    Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined; do not overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will still be soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for 1 minute.

    Run a knife around the edges of the cakes and carefully invert them onto plates. Serve immediately with a scoop of vanilla ice cream, dust with powdered sugar, and garnish with fresh berries if desired.
