Potato Chips

    Prepare the Potatoes

    Wash and peel 4 medium Russet potatoes. Slice them thinly using a mandoline or a sharp knife, aiming for about 1/8 inch thick.

    Soak the Slices

    Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and allows for crispier chips.

    Dry the Potato Slices

    After soaking, drain the potatoes and lay them out on a clean kitchen towel. Pat them dry with another towel to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat 4 cups of vegetable oil to 375°F (190°C). Use a thermometer to monitor the temperature.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

    Sprinkle the hot chips with salt, paprika, and garlic powder to taste while they are still hot.

    In a large pot or deep fryer, heat 2 cups of vegetable oil to 350°F (175°C).

    Carefully add a batch of tortilla triangles to the hot oil. Fry for about 2-3 minutes or until golden and crispy. Remove with a slotted spoon and place on paper towels to drain.
