    Prepare the Meat

    In a skillet over medium heat, cook the choice of meat (bacon, sausage, or ham) until browned and crispy. Remove from the skillet and set aside.

    Fry the Eggs

    In the same skillet, add a little more oil if necessary, and crack the eggs into the skillet. Season with salt and pepper. Cook until the whites are set and the yolks are cooked to your liking (sunny side up, over easy, etc.).

    Toast the Bread

    While the eggs are cooking, toast the bread or English muffin until golden brown.

    Assemble the Sandwich

    Place the fried eggs on the toasted bread or muffin, add the cheese slices, and top with the cooked meat. Cover with the other slice of bread or muffin.

Hashbrowns

    Prepare the Potatoes

    Peel and grate the potatoes using a box grater or food processor. Rinse the grated potatoes under cold water to remove excess starch, then drain well and pat dry with a towel.

    Cook the Hashbrowns

    In a large skillet, heat the oil over medium-high heat. Add the grated potatoes and finely chopped onion. Season with salt and pepper. Press the mixture down with a spatula and cook for about 5-7 minutes until golden brown and crispy. Flip and cook the other side for an additional 5-7 minutes.
