Prepare the Base

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional minute. Then, add the canned diced tomatoes, tomato paste, and chicken broth. Stir to combine.

Season the Sauce

Add the Cajun seasoning, salt, black pepper, and bay leaves. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.

Cook the Shrimp

Add the shrimp to the sauce and cook until they turn pink and are cooked through, about 5 minutes.

Serve

Remove the bay leaves and serve the shrimp creole over cooked white rice. Garnish with chopped fresh parsley.
