Hummus

    Prepare the Ingredients

    Drain and rinse the canned chickpeas. Peel the garlic clove.

    Blend the Hummus

    In a food processor, combine the chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth.

    Serve the Hummus

    Transfer the hummus to a serving bowl and sprinkle with paprika. Set aside.

Falafel

    Soak the Chickpeas

    Soak the dry chickpeas in water overnight. Drain and rinse before using.

    Prepare the Mixture

    In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.

    Shape the Falafel

    Form the mixture into small balls or patties, about 1 inch in diameter.

    Fry the Falafel

    Heat oil in a frying pan over medium heat. Fry the falafel balls until golden brown on all sides, about 4-5 minutes. Drain on paper towels.

    Arrange the falafel on a serving platter.

Tabbouleh

    Prepare the Bulgur

    In a bowl, combine bulgur wheat and boiling water. Cover and let sit for 15 minutes, then fluff with a fork.

    Finely chop the tomato, cucumber, parsley, and mint.

    In a large bowl, combine the fluffed bulgur, chopped vegetables, lemon juice, olive oil, and salt. Mix well.

    Transfer the tabbouleh to a serving dish.

Pita

    Warm the Pita

    Warm the pita bread in a dry skillet or oven for a few minutes until heated through.

    Place the warm pita on the platter alongside the hummus, falafel, and tabbouleh.
