Method

Falafel

    Soak Chickpeas

    In a bowl, cover dried chickpeas with water and soak overnight.

    Prepare Mixture

    In a food processor, combine soaked chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms.

    Form Balls

    Wet your hands and form the mixture into small balls or patties.

    Fry Falafel

    Heat the oil in a deep frying pan. Fry the falafel balls in batches until golden brown, about 5 minutes per side. Drain on paper towels.

    Prepare Vegetables

    Chop the romaine lettuce, tomatoes, cucumber, radishes, and green onions into bite-sized pieces.

    Toast Pita

    Tear the pita bread into pieces and toast until crispy.

    Make Dressing

    In a bowl, whisk together olive oil, lemon juice, and salt.

    Combine Salad

    In a large bowl, combine vegetables, toasted pita, and mint. Drizzle with dressing and toss to combine.

Hummus

    Blend Ingredients

    In a food processor, combine canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add more water, a tablespoon at a time, until desired consistency is reached.

Mjadarah

    Cook Lentils

    In a pot, combine lentils with 3 cups of water. Bring to a boil and simmer for 15 minutes until lentils are tender.

    Add Rice

    Add rice to the pot, along with salt. Stir well and cover. Cook for an additional 20 minutes.

    Caramelize Onions

    In a skillet, heat olive oil and sauté sliced onions until golden brown and caramelized. Mix with the lentil and rice mixture.

Pita Bread

    Prepare Dough

    In a bowl, mix flour, water, yeast, olive oil, and salt until it forms a dough.

    Knead Dough

    Knead the dough on a floured surface for about 10 minutes until smooth.

    Let Rise

    Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

    Shape Pita

    Preheat the oven to 475°F (245°C). Divide the dough into balls and roll out into circles.

    Bake Pita

    Place the rolled-out dough on a baking sheet and bake for 5-7 minutes until puffed and lightly golden.
