Falafel

Soak Chickpeas
In a bowl, cover dried chickpeas with water and soak overnight.

Form Balls
Wet your hands and form the mixture into small balls or patties.

Fry Falafel
Heat the oil in a deep frying pan. Fry the falafel balls in batches until golden brown, about 5 minutes per side. Drain on paper towels.

Prepare Vegetables
Chop the romaine lettuce, tomatoes, cucumber, radishes, and green onions into bite-sized pieces.

Toast Pita
Tear the pita bread into pieces and toast until crispy.

Combine Salad
In a large bowl, combine vegetables, toasted pita, and mint. Drizzle with dressing and toss to combine.
Hummus

Blend Ingredients
In a food processor, combine canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth.

Adjust Consistency
If the hummus is too thick, add more water, a tablespoon at a time, until desired consistency is reached.

Knead Dough
Knead the dough on a floured surface for about 10 minutes until smooth.

Let Rise
Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Shape Pita
Preheat the oven to 475°F (245°C). Divide the dough into balls and roll out into circles.

Bake Pita
Place the rolled-out dough on a baking sheet and bake for 5-7 minutes until puffed and lightly golden.
