Method
Preparation of Salmon
- 1
Marinating the Salmon
In a small bowl, combine olive oil, lemon juice, minced garlic, chopped fresh dill, salt, and black pepper to create a marinade.
- 2
Coating the Salmon
Place the salmon fillets in a large zip-top bag or shallow dish. Pour the marinade over the salmon, making sure it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking the Salmon
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 4
Bake the Salmon
Line a baking sheet with parchment paper or foil for easy cleanup. Place the marinated salmon fillets on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
Optional Sides Preparation
- 5
Prepare Asparagus
While the salmon is baking, wash the asparagus and trim the ends. You can roast them in the oven alongside the salmon for the last 10 minutes of cooking, drizzled with olive oil, and seasoned with salt and pepper.
- 6
Prepare Cherry Tomatoes
Rinse the cherry tomatoes and set them aside. You can add them to the baking sheet for the last 5 minutes of cooking to warm them through.
Serving
- 7
Plating the Dish
Once the salmon is done, remove it from the oven and let it rest for a couple of minutes. Serve the salmon with roasted asparagus and cherry tomatoes, garnished with lemon wedges.
