Chicken Kabobs

Marinate the Chicken
In a bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Add the chicken breast cut into cubes and marinate for at least 30 minutes.

Prepare the Vegetables
Chop the bell pepper and red onion into chunks.

Assemble Kabobs
Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.

Chop the bell pepper and red onion into chunks.

Prepare the Vegetables
Wash and chop the romaine lettuce, cucumber, tomatoes, and radishes into bite-sized pieces. Slice the green onions.

Mix the Salad
In a large bowl, combine the chopped vegetables, mint leaves, and parsley.

Dress the Salad
Drizzle lemon juice and olive oil over the salad. Toss well to combine.

Serve with Pita
Cut the pita bread into triangles and serve alongside the salad.
Hummus

Combine Ingredients
In a food processor, combine canned chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water.

Blend the Hummus
Blend until smooth, adding more water if necessary to reach desired consistency.

Serve
Transfer the hummus to a serving bowl and sprinkle with paprika. Drizzle with olive oil if desired.
Mjadarah

Cook the Lentils
In a pot, combine lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes until lentils are tender.

Combine Rice and Lentils
Add rinsed rice, cooked lentils, remaining water, salt, and black pepper to the skillet. Stir well to combine.

Cook the Mjadarah
Bring to a boil, then reduce heat to low, cover, and cook for 20 minutes until rice is tender and water is absorbed.
