Lamb Marinade Preparation

    Prepare the Marinade

    In a bowl, combine minced garlic, olive oil, lemon juice, oregano, cumin, salt, and black pepper.

    Marinate the Lamb

    Place the lamb shoulder in a large resealable plastic bag or bowl. Pour the marinade over the lamb, ensuring it is well-coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight.

Tzatziki Sauce Preparation

    Prepare the Cucumber

    Grate the cucumber and use a clean cloth or paper towel to squeeze out excess moisture.

    Mix the Tzatziki Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, salt, and black pepper. Mix well and refrigerate until ready to serve.

Cooking and Assembling

    Cook the Lamb

    Preheat your grill or oven to medium-high heat. Remove the lamb from the marinade and grill for about 15-20 minutes per side, or until it reaches an internal temperature of 145°F (63°C) for medium-rare. Let it rest for 10 minutes before slicing.

    Prepare the Vegetables

    While the lamb is resting, wash and slice the tomato, and thinly slice the red onion.

    Assemble the Gyros

    Warm the pita bread on the grill or in a pan. Place a few slices of lamb on each pita, add lettuce, tomato slices, and red onion. Drizzle with tzatziki sauce.
