Kibbeh Dough Preparation

Prepare Bulgur
Rinse the fine bulgur wheat under cold water until the water runs clear. Drain well.

Soak Bulgur
In a bowl, combine the rinsed bulgur with 2 cups of water. Let it soak for about 30 minutes until the bulgur absorbs the water and becomes soft.

Combine Ingredients
In a large mixing bowl, combine the soaked bulgur, ground lamb or beef, finely chopped onion, ground cinnamon, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Knead Dough
Knead the mixture with your hands for about 5 minutes until it forms a smooth dough. If the dough is too dry, you can add a little water.

Divide Dough
Divide the dough into two equal portions. Set aside.
Filling Preparation

Cook Meat
Add the ground lamb or beef to the skillet and cook until browned, breaking it up with a spatula.

Add Seasonings
Stir in the toasted pine nuts, ground cinnamon, salt, and black pepper. Cook for an additional 2-3 minutes, then remove from heat and let cool.
Assembling Kibbeh

Flatten Dough
Take one portion of the dough and flatten it into a disc shape, about 1/4 inch thick.

Fill and Seal
Place a portion of the filling in the center of the disc. Carefully fold the dough over the filling and seal the edges by pinching them together.

Repeat Filling
Repeat the process with the remaining dough and filling.
Cooking Kibbeh

Preheat Oven
Preheat the oven to 375°F (190°C).

Prepare for Baking
Place the assembled Kibbeh on a greased baking sheet. Brush the tops with olive oil.

Bake Kibbeh
Bake in the preheated oven for 25-30 minutes, or until golden brown.

Cool and Serve
Remove from the oven and let cool slightly before serving.
