Kabobs Preparation

Marinate the Chicken
In a large bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade. Cut the chicken breast into 1-inch cubes and add them to the marinade. Toss well to ensure the chicken is evenly coated. Cover and refrigerate for at least 1 hour or up to overnight for best flavor.

Prepare the Vegetables
While the chicken is marinating, wash and chop the bell peppers, red onion, and zucchini into 1-inch pieces. Set aside.

Assemble the Kabobs
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Alternate threading the marinated chicken pieces and the chopped vegetables onto the skewers. Leave space between each piece for even cooking.

Make the Toum
In a food processor, combine garlic cloves and salt. Pulse until finely minced. Add the egg white and lemon juice, and blend until smooth. With the processor running, slowly drizzle in the olive oil until the mixture thickens and becomes creamy. Adjust salt to taste.
