Kabob Preparation

    Marinate the Chicken

    In a mixing bowl, combine olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper. Add the chicken breast cut into 1-inch cubes and mix until well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare the Vegetables

    While the chicken is marinating, chop the bell peppers and red onion into similar-sized pieces, approximately 1-inch squares to ensure even cooking.

    Assemble the Skewers

    Once marinated, thread the chicken cubes and vegetable pieces onto the skewers, alternating between chicken and vegetables. Aim for 3-4 pieces of chicken and 2-3 pieces of vegetables per skewer.

    Grill the Kabobs

    Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 75°C or 165°F) and the vegetables are tender.

    If making from scratch, blend chickpeas, tahini, lemon juice, garlic, and olive oil in a food processor until smooth. Adjust seasoning with salt and serve in a bowl.

    Finely chop parsley, mint, and tomatoes. Mix with cooked bulgur wheat, olive oil, lemon juice, salt, and pepper to taste. Let sit to enhance flavors.
