Falafel

Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, flour, salt, and pepper. Blend until the mixture is coarse but holds together when pressed.

Shape the Falafel
Form the falafel mixture into small balls or patties, about 2 inches in diameter.

Fry the Falafel
In a deep pan, heat the vegetable oil over medium-high heat. Fry the falafel in batches for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Blend the Hummus Ingredients
In a food processor, add the canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth and creamy. Adjust the consistency with more water if needed.
Tabbouleh

Prepare the Bulgur
In a bowl, combine the bulgur wheat and boiling water. Cover and let it sit for 15 minutes or until the bulgur is tender.

Mix the Tabbouleh Ingredients
Fluff the bulgur with a fork, then add the parsley, mint, diced tomatoes, diced cucumber, lemon juice, olive oil, and salt. Mix well and let it rest for 10 minutes before serving.

Warm the Pita
Warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side, or until soft and pliable.
