Falafel

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Soak overnight or for at least 8 hours.

    Make Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms. If it’s too wet, add flour as needed.

    Shape Falafel

    Form the mixture into small balls or patties (about 1.5 inches in diameter) and place them on a plate.

    Fry Falafel

    In a deep skillet, heat oil over medium-high heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Hummus

    Blend Ingredients

    In a food processor, combine canned chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, and water. Blend until smooth and creamy. Adjust seasoning and consistency with more water if needed.

Tabbouleh

    Prepare Bulgar

    In a bowl, combine bulgur wheat and boiling water. Cover and let sit for about 15 minutes until all water is absorbed. Fluff with a fork.

    Mix Tabbouleh

    Add parsley, diced tomato, diced cucumber, lemon juice, olive oil, and salt to the bulgur. Mix well and let sit for 10 minutes before serving.

    Plate the crispy falafel alongside a generous serving of hummus, tabbouleh, and warm pita bread.
