Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Nut Filling
In a mixing bowl, combine finely chopped walnuts, almonds, sugar, and ground cinnamon. Mix well until fully combined.

Prepare the Filo Pastry
Unroll the filo pastry and cover it with a damp cloth to prevent it from drying out.

Add the Nut Filling
Spread a thin layer of the nut filling over the layered filo pastry. Continue layering 4 more sheets of filo, each brushed with butter, followed by another layer of nut filling. Repeat this until all the nut filling is used, finishing with 8 layers of filo on top.

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes. Be careful to cut through to the bottom layer.

Bake the Baklava
Bake the baklava in the preheated oven for about 50 minutes, until golden brown and crisp.

Prepare Honey Syrup
While the baklava is baking, combine granulated sugar, water, honey, and vanilla extract in a saucepan. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes. Remove from heat and let cool.

Soak the Baklava
Once the baklava is done baking, immediately pour the cooled honey syrup over it, ensuring it soaks into the cuts made earlier. Allow the baklava to cool completely before serving.
