Prepare guava puree

If using fresh guavas: wash 6–8 ripe guavas, quarter them and remove large seeds. Cook briefly with 2–3 tablespoons water over low heat for 5 minutes just to soften (optional). Cool slightly, then puree in a blender until smooth. Strain through a fine mesh sieve into a bowl to remove fine seeds and pulp for a silky punch. You should have about 2 cups of puree.

In a large pitcher, combine the strained guava puree, 1/2 cup fresh lime juice, 1/2 cup simple syrup, and 1 cup cold water. Whisk well to combine. Taste and adjust sweetness or acidity: add more syrup if too tart or more lime if too sweet.

Bambucha & Fizz

Chill the bambucha and club soda ahead of time. When ready to serve, slowly fold 3 cups chilled bambucha into the guava base to preserve carbonation. If you want extra fizz or a lighter drink, top with up to 1 cup club soda and stir gently once to combine.

If using the optional boozy version, stir in 1/2 cup white rum now. If using bitters for complexity, add 6 dashes (approximately 6 tsp listed as optional) distributed across the pitcher and stir gently.

Lightly clap the mint leaves between your palms to release aroma and add most of them to the pitcher, reserving some for garnish. Add the lime wheels and guava slices to the pitcher for visual appeal and extra flavor infusion. Add ice to the pitcher or fill individual glasses with ice when serving.

Ladle or pour the punch into glasses over ice. Garnish each glass with a mint sprig, a lime wheel on the rim, and a guava slice. Serve immediately to preserve carbonation.

Serving & Storage

Serves immediately for best fizz. If you must store leftovers, refrigerate in a sealed container without ice for up to 24 hours; add fresh bambucha (about 1/2–1 cup) and stir lightly before serving to restore effervescence. Do not store with club soda or ice to avoid dilution and loss of carbonation.
