Method

Preparation of Fish

  1. 1

    Season the Fish

In a bowl, season the whole red snapper fillets with salt, black pepper, and garlic powder. Set aside for 15 minutes to allow the flavors to meld.

  2. 2

    Prepare Breading

In a shallow dish, mix together the all-purpose flour and cornstarch. In another shallow bowl, beat the egg.

  3. 3

    Batter the Fish

Dredge each fillet first in the flour-cornstarch mixture, then dip into the beaten egg, and finally coat again with the flour-cornstarch mixture for a crispy texture.

Frying the Fish

  1. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Fish

Carefully add the battered fish fillets to the hot oil in batches, ensuring not to overcrowd the pot. Fry for 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Prepare the Sauce

  1. 6

    Mix the Sauce

In a small bowl, combine soy sauce, chili sauce, honey, lime juice, and chopped basil leaves. Stir well to combine and set aside.

Prepare Vegetable Medley

  1. 7

    Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

  2. 8

    Cook the Medley

Add bell peppers, carrots, and zucchini to the skillet. Season with salt and pepper. Sauté for 5-7 minutes until the vegetables are tender but still crisp.

Serving

  1. 9

    Plate the Dish

Serve the crispy fried red snapper with a side of sautéed vegetable medley and drizzle the tri-flavor sauce or spicy basil sauce over the fish.
