Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it cool slightly before gently folding in the vinegar mixture.

Prepare Sushi Fillings

    Slice Fish

    Using a sharp knife, slice the fresh salmon and tuna into thin strips for nigiri or sashimi.

    Prepare Vegetables

    Julienne the cucumber and slice the avocado into thin slices.

Assemble Sushi

    Roll Sushi

    Place a sheet of nori on a bamboo sushi mat. Spread a layer of sushi rice over the nori, leaving a 1-inch border at the top. Add fillings (fish, cucumber, avocado) in a line across the rice. Roll the mat away from you, pressing gently to form a tight roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Repeat with remaining nori and fillings.

    Arrange the fresh shrimp and yellowtail on a serving platter. Ensure they are sliced neatly and presented well.

    Arrange the sushi rolls and sashimi on a large platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
