Method

Steak Preparation

  1. 1

    Season the Steak

Pat the ribeye steaks dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.

  2. 2

    Heat the Pan

In a large skillet, heat olive oil over medium-high heat until it shimmers.

  3. 3

    Cook the Steak

Add the seasoned steaks to the hot skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time for your desired doneness.

  4. 4

    Add Butter and Herbs

In the last minute of cooking, add butter and thyme to the pan. Spoon the melted butter over the steaks as they finish cooking.

  5. 5

    Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.

Frites Preparation

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

  2. 7

    Soak the Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

  3. 8

    Heat the Oil

In a large pot, heat vegetable oil to 350°F (175°C).

  4. 9

    Fry the Potatoes

Fry the potatoes in batches, cooking for about 5-7 minutes or until golden brown and crisp. Remove with a slotted spoon and drain on paper towels.

  5. 10

    Season the Frites

While still hot, season the frites with salt to taste.

Dipping Sauce Preparation

  1. 11

    Make the Sauce

In a small bowl, mix the mayonnaise, minced garlic, and lemon juice until well combined. Adjust seasoning as needed.
