    Prepare the Vegetables

    Wash the eggplants and slice them into long strips approximately 1-inch thick. Peel the yellow onion and slice it thinly. Remove the seeds from the mild peppers and slice them into strips. Mince the garlic cloves.

    Sauté the Aromatics

    In a large skillet or wok, heat the sesame oil over medium heat. Add the sliced onion and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Eggplant

    Add the sliced eggplant and mild peppers to the skillet. Stir well and cook for about 5-7 minutes until the eggplant begins to soften.

    Add the Sauce

    Stir in the chili paste, soy sauce, sugar, and salt. Mix well to ensure all the vegetables are coated in the sauce. Cover the skillet and let it simmer for another 10 minutes, stirring occasionally, until the eggplant is tender and the sauce thickens.

    Chop the green onions and sprinkle them over the eggplant dish along with sesame seeds. Serve hot with steamed rice or as a side dish.
