Beef Preparation

    In a bowl, combine the beef sirloin with Rama curry paste and green curry paste. Mix thoroughly to ensure the beef is well coated. Cover and let it marinate for at least 30 minutes in the refrigerator.

    Heat a grill or skillet over medium-high heat. Once hot, add the marinated beef sirloin and cook for about 5-7 minutes on each side or until cooked to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly.

    In a small bowl, whisk together lime juice, fish sauce, honey, and red chili flakes until well combined. Adjust seasoning to taste, adding more honey for sweetness or chili flakes for heat if desired.

Salad Assembly

    In a large salad bowl, combine mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
