In a large bowl, combine soy sauce, peanut butter, honey, lime juice, minced garlic, grated ginger, cayenne pepper, salt, and black pepper. Mix well until smooth.

Cut the chicken breast into strips or cubes and add to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Make the Satay Sauce
In a saucepan, combine coconut milk, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and chili flakes. Cook over medium heat, stirring until the mixture is well combined and slightly thickened, about 5-7 minutes. Remove from heat and set aside.

Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers. Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked and slightly charred.
