Preparation

    Prepare the Protein

    If using chicken, cut the chicken breast into bite-sized pieces. If using tofu, press it to remove excess moisture and cut it into cubes.

    Chop the Vegetables

    Slice the bell pepper and carrot into thin strips. Prepare broccoli florets by cutting them into smaller pieces.

Cooking

    Cook the Protein

    In a large pan or wok, heat a tablespoon of oil over medium heat. Add the chicken or tofu and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Make the Curry Base

    In the same pan, add another tablespoon of oil if needed. Stir in the red curry paste and cook for 1-2 minutes until fragrant.

    Add Coconut Milk

    Pour in the coconut milk, stirring well to combine with the curry paste. Bring to a gentle simmer.

    Incorporate Vegetables and Bamboo Shoots

    Add the bamboo shoots, bell pepper, carrot, and broccoli florets to the pan. Stir to coat the vegetables in the curry base. Cook for about 5 minutes until the vegetables are tender.

    Finish the Dish

    Return the cooked protein back to the pan. Stir in fish sauce, sugar, and salt to taste. Let everything simmer together for an additional 2-3 minutes.

    Garnish and Serve

    Remove from heat, and stir in fresh basil leaves. Serve hot over rice or noodles.
