Preparation

  1. 1

    Prepare the Grilled Chicken

If not pre-cooked, grill the chicken breast until fully cooked, about 6-8 minutes per side. Let it rest for a few minutes, then slice into thin strips.

  2. 2

    Prepare the Vegetables

Thinly slice the red onion, cucumber, and purple cabbage. Shred the lettuce and finely grate the ginger.

  3. 3

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice it into thin strips.

  4. 4

    Prepare the Fresh Basil

Wash the fresh basil leaves and pat them dry.

  5. 5

    Prepare the Rice Paper Wrappers

Fill a large shallow dish with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

Assembly

  1. 6

    Assemble the Fresh Roll

On the softened rice paper wrapper, lay down a few pieces of grilled chicken, a sprinkle of grated ginger, slices of red onion, cucumber, lettuce, purple cabbage, a slice of avocado, and a few basil leaves. Squeeze a little lime juice over the filling.

  2. 7

    Roll the Fresh Roll

Fold the sides of the rice paper over the filling, then roll from the bottom up tightly to enclose the filling. Repeat with the remaining ingredients.

Serving

  1. 8

    Serve the Fresh Rolls

Cut each roll in half and serve with a side of lime wedges and your favorite dipping sauce.
