Prepare the Ginger
Peel and grate the ginger root. This will release its natural oils and juices.

Strain the Syrup
Strain the ginger syrup through a fine sieve or cheesecloth into a bowl to remove the solids. Add the remaining 250 ml of water, citric acid, lime juice, and lemon zest to the syrup and mix well.

In a small bowl, dissolve the yeast in a few tablespoons of warm water (not hot). Let it sit for about 5 minutes until frothy.
