Duck Preparation

    Prepare the Duck

    Preheat your oven to 400°F (200°C). Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Sear the Duck

    Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, place the duck breast skin-side down and sear for about 6-8 minutes until the skin is crispy and golden brown.

    Roast the Duck

    Flip the duck breast over and brush with maple syrup. Transfer the skillet to the preheated oven and roast for an additional 8-10 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Rest the Duck

    Remove the duck from the oven and let it rest for 5 minutes before slicing.

    While the duck is roasting, julienne the carrot and cucumber. Chop the green onion into thin slices. Set aside.

    Cut the lime in half and squeeze the juice into a small bowl, discarding the seeds.
