Main Ingredients

Method

Preparation of Ingredients

  1. 1

    Prepare Scallops

Rinse the scallops under cold water and pat dry with paper towels. Season with salt and pepper on both sides.

  2. 2

    Chop Vegetables

Finely chop the onion and mild pepper. Slice the mushrooms.

  3. 3

    Fried Rice Preparation

Prepare the fried rice if not using pre-made. You can use leftover rice and sauté it with vegetables or cook fresh rice.

  4. 4

    Prepare Salad Ingredients

Wash and dry the salad greens, and slice the cucumber.

Cooking Scallops

  1. 5

    Heat Skillet

Heat a non-stick skillet over medium-high heat. Add a tablespoon of olive oil.

  2. 6

    Cook Scallops

Once the oil is hot, add the scallops to the skillet. Cook for 2-3 minutes on each side until they are golden brown and opaque in the center.

  3. 7

    Set Aside Scallops

Remove scallops from the skillet and set aside.

Cooking Vegetables and Fried Rice

  1. 8

    Sauté Vegetables

In the same skillet, add the chopped onion, mild pepper, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes.

  2. 9

    Combine Rice and Vegetables

Add the fried rice to the skillet, mixing it with the sautéed vegetables. Cook for an additional 5 minutes, stirring occasionally.

  3. 10

    Add Fried Basil

Add fried basil to the rice mixture and stir gently.

Preparing the Side Salad

  1. 11

    Mix Salad Ingredients

In a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber.

  2. 12

    Dress the Salad

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle over the salad and toss gently.

Final Assembly

  1. 13

    Plate the Dish

On a plate, serve a portion of the fried rice mixture. Top with the cooked scallops and drizzle basil sauce over the top.

  2. 14

    Serve

Serve the side salad alongside the scallop dish.
