Wings Preparation

Brine the Wings
In a large bowl, combine water, salt, sugar, black peppercorns, and crushed garlic cloves. Stir until salt and sugar are dissolved. Add chicken wings to the brine, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or up to overnight.

Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil for easy cleanup.

Prepare the Wings
Remove the wings from the brine and pat them dry with paper towels. This will help them crisp up during cooking.

Season the Wings
Toss the wings in your choice of dry rub or sauce until evenly coated.

Bake the Wings
Place the wings in a single layer on the prepared baking sheet. Bake for 40-45 minutes, turning halfway through, until they are golden brown and crispy.

Remove from the oven and let them cool for a few minutes. Serve with additional sauce or dry rub on the side.
