Pretzel Preparation
Make the Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let sit for about 5 minutes until foamy. Gradually mix in the flour and salt until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.
Shape the Pretzels
Preheat the oven to 450°F (230°C). Divide the dough into 4 equal pieces. Roll each piece into a long rope, then twist into a pretzel shape.
Boil the Pretzels
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully add the pretzels, one at a time, and boil for 30 seconds on each side. Remove and place on a parchment-lined baking sheet.
Bake the Pretzels
Sprinkle coarse sea salt on top of the pretzels and bake in the preheated oven for 12-15 minutes or until golden brown.
