    Sauté the Onions

    In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and sauté until they are soft and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.

    Prepare the Sandwich

    Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread. On the dressing side of two slices, layer a slice of Swiss cheese, followed by the sautéed onions, and another slice of Swiss cheese.

    Grill the Sandwich

    Top the sandwiches with the remaining slices of rye bread, dressing side down. Heat the skillet over medium heat and add the remaining tablespoon of butter. Once melted, place the sandwiches in the skillet. Grill each side until golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Remove the sandwiches from the skillet, slice in half if desired, and serve warm with extra Thousand Island dressing on the side.
