    Prepare the Wasabi Sour Cream

    In a small bowl, mix the sour cream, wasabi paste, sesame oil, and a pinch of salt and pepper. Adjust the wasabi to your taste for spiciness. Set aside.

    Make the Soy Glaze

    In a small saucepan, combine soy sauce and honey. Heat over low heat until the honey dissolves. Let it simmer for a few minutes until it thickens slightly. Remove from heat and let cool.

    Prepare the Ahi Tuna

    Season the ahi tuna steak with salt and pepper. Heat a grill or skillet over medium-high heat and sear the tuna for about 1-2 minutes on each side for rare, or cook to your desired doneness. Remove from heat and let rest for a minute before slicing thinly.

    Prepare the Cucumber

    Slice the cucumber into thin rounds or ribbons for garnish.

Assembly

    Spread a generous amount of wasabi sour cream on the bottom half of each brioche bun. Layer with sliced ahi tuna, cucumber slices, and drizzle with soy glaze. Top with the other half of the brioche bun.
