Prepare the Grits
In a medium saucepan, bring the water or chicken broth to a boil. Slowly whisk in the stone ground grits, reduce heat to low, and simmer for about 20-25 minutes, stirring frequently, until the grits are creamy. Stir in butter and season with salt and black pepper to taste.

Cook the Sausage and Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Add the diced green and red bell peppers and minced garlic, and sauté for an additional 3-4 minutes until the peppers are tender.

Cook the Shrimp
Add the shrimp to the skillet, season with salt, black pepper, and cayenne pepper. Cook until the shrimp turn pink and opaque, about 3-5 minutes.

Combine and Serve
To serve, spoon the creamy grits onto plates and top with the shrimp and sausage mixture. Garnish with chopped scallions.
