    Prepare the fries

    Wash and peel the Russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

    Soak the fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Heat the oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the potatoes

    Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Season the fries

    While the fries are hot, sprinkle with Cajun seasoning and toss to coat evenly.

    Make the cheese sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute until golden. Gradually whisk in the milk, stirring until thickened. Add the shredded cheddar cheese and stir until melted and smooth.

    Assemble the fries

    Place the seasoned fries on a serving platter, drizzle with the cheese sauce, and top with the crumbled bacon and chopped scallions.
