Prepare the Peppers
Rinse the shishito peppers under cold water and pat them dry with a paper towel.

Blister the Peppers
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the shishito peppers in a single layer. Cook for about 5 to 7 minutes, turning occasionally, until the peppers are blistered and charred on all sides.

Season the Peppers
Sprinkle the kosher salt and Cajun seasoning over the blistered peppers and toss to coat evenly.

Make the Cajun Dipping Sauce
In a small bowl, combine mayonnaise, hot sauce, and lemon juice. Mix well until smooth.

Transfer the blistered shishito peppers to a serving platter and serve hot with the Cajun dipping sauce on the side.
