    Prepare the Pork

    Rub the pork shoulder with your favorite dry rub and let it sit for at least 1 hour, preferably overnight in the refrigerator.

    Smoke the Pork

    Preheat your smoker to 110°C (225°F). Place the pork shoulder in the smoker and cook for about 8 hours, or until the internal temperature reaches 95°C (203°F).

    Rest and Chop

    Remove the pork from the smoker and let it rest for at least 30 minutes. After resting, chop the pork into bite-sized pieces.

    Serve

    Serve the chopped pork with barbecue sauce on the side and your choice of two sides.
