Preparation

  1. 1

    Prepare the ingredients

Chop the bacon into small pieces. Grate the Parmesan cheese and set aside. Beat the eggs in a mixing bowl and season with a little salt and black pepper.

Cooking

  1. 2

    Cook the spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente (usually around 8-10 minutes). Reserve 1 cup of the pasta cooking water and then drain the spaghetti.

  2. 3

    Cook the bacon

In a large skillet over medium heat, add the chopped bacon. Cook until crispy and golden brown, about 5-7 minutes. Remove the skillet from heat.

  3. 4

    Combine pasta and sauce

Add the drained spaghetti to the skillet with the bacon, and toss to combine. Quickly pour in the beaten eggs and Parmesan cheese, and mix vigorously. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  4. 5

    Season and serve

Taste and adjust seasoning with additional salt and black pepper if needed. Serve immediately, garnished with chopped parsley if desired.
