Prepare the Pastry Shells

Make the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Cut in the unsalted butter until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg yolk, white wine (or vinegar), and water. Add this mixture to the dry ingredients and knead until the dough is smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll and Cut the Dough
On a floured surface, roll out the dough to about 1/8 inch thick. Cut into 4-inch circles using a cookie cutter or a glass.

Form the Shells
Wrap each circle around a cannoli form, sealing the edges with water. Repeat until all dough is used.

Fry the Shells
In a deep fryer or heavy skillet, heat the oil to 350°F (175°C). Fry the cannoli shells in batches until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Allow to cool before removing from the forms.

Mix the Filling
In a medium bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until well combined and smooth.

Add Chocolate Chips
Fold in the chocolate chips into the ricotta mixture until evenly distributed.

Fill the Cannoli
Using a pastry bag or a spoon, fill each cooled cannoli shell with the ricotta filling. Be generous to ensure they are well stuffed.

Garnish
Sprinkle the ends of the filled cannoli with chopped pistachios or almonds for added crunch and decoration.
