Cooking the Pasta

    Boil the water

    Fill a large pot with water, add 1 teaspoon of salt, and bring it to a boil over high heat.

    Cook the spaghetti

    Once the water is boiling, add 400 grams of spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve pasta water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti in a colander.

Preparing the Sauce

    Cook the pancetta

    In a large skillet over medium heat, add 150 grams of pancetta. Cook until crispy and golden, about 5-7 minutes. Remove from heat.

    Prepare the egg mixture

    In a bowl, whisk together 4 large eggs, 100 grams of grated Parmesan cheese, and 1 teaspoon of black pepper until well combined.

Combining Pasta and Sauce

    Mix pasta with pancetta

    Add the drained spaghetti to the skillet with the crispy pancetta. Toss to combine and allow the spaghetti to absorb some of the pancetta fat.

    Add egg mixture

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water until reaching desired consistency.

Serving

    Garnish and serve

    Serve immediately, garnished with chopped parsley and additional grated Parmesan cheese if desired.
