Method

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes until it absorbs the water and becomes gel-like.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

    Add Gelatin

    Remove the saucepan from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour Into Molds

    Pour the mixture into individual serving molds or cups. Allow them to cool at room temperature for about 30 minutes.

    Refrigerate

    Once cooled, cover the molds with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Compote Preparation

    Prepare the Berries

    In a medium saucepan, add the mixed berries, granulated sugar, and lemon juice.

    Cook the Compote

    Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10-15 minutes.

    Cool and Serve

    Remove from heat and let cool. Serve the berry compote over the panna cotta just before serving.
