Gelato Base Preparation

    Heat Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

    Temper the Egg Mixture

    Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking continuously to avoid curdling the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Cool and Add Flavorings

    Remove from heat, stir in vanilla extract and a pinch of salt. Let it cool at room temperature, then refrigerate until completely chilled (at least 2 hours).

    If using fresh fruit, puree the fruit in a blender or food processor until smooth. If using chocolate or nuts, prepare them by chopping as needed.

    Once the base is chilled, stir in your choice of flavor: for fruit, mix in the fruit puree; for chocolate, add the chopped chocolate; for nuts, fold in the chopped nuts.

    Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (usually about 20-25 minutes).
