Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix until well combined.

  2. 2

    Coat the Calamari

Dredge the cleaned and sliced calamari in the flour mixture, ensuring each piece is well coated. Shake off any excess flour.

  3. 3

    Heat the Oil

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Fry the Calamari

Working in batches, carefully add the coated calamari to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

  1. 5

    Sauté the Garlic

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

  2. 6

    Add Tomatoes and Seasonings

Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

  3. 7

    Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.

  4. 8

    Finish with Basil

Just before serving, stir in the chopped fresh basil into the marinara sauce.
