Prepare the Marinade
In a small bowl, combine the minced garlic, chopped rosemary, thyme, EVOO, sea salt, and black pepper. Mix well to form a marinade.
Marinate the Chicken
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Preheat the Oven
Preheat your oven to 400°F (200°C).
Roast the Chicken
Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Discard any remaining marinade. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
Serve
Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve warm, garnished with additional rosemary if desired.
