Preheat your oven to 375°F (190°C). Pat the whole chicken dry with paper towels. Rub olive oil all over the chicken, making sure to cover it evenly.

Place the seasoned chicken in a roasting pan, breast side up. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes. Then, shred the chicken meat using two forks.
