Prepare the Poblano Peppers
Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast them for about 20 minutes, turning occasionally, until the skin is charred and blistered. Remove from the oven and let cool. Once cool, peel off the skins, remove the seeds, and chop the peppers.

Assemble the Queso
In a medium oven-safe dish, layer the ingredients starting with the roasted poblano peppers at the bottom. Next, add the pico de gallo, followed by the shredded cheese, and top with diablo salsa.

Melt the Cheese
Place the assembled dish in the oven and bake for about 15 minutes, or until the cheese is fully melted and bubbly.

Garnish and Serve
Once out of the oven, sprinkle the crumbled cotija cheese on top. Serve immediately with crispy tortilla chips for dipping.
