    Cook the Pasta

    In a large pot, bring salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, stirring constantly. Gradually whisk in the milk, continuing to whisk until the mixture thickens and becomes creamy, about 5-7 minutes.

    Add Cheese and Spices

    Remove the saucepan from heat and add the sharp cheddar cheese, cream cheese, roasted poblano peppers, salt, black pepper, paprika, and garlic powder. Stir until the cheese is melted and the mixture is smooth.

    Add the cooked macaroni to the cheese sauce and stir until well combined. Transfer to a greased baking dish.

    Prepare Breadcrumb Topping
