Cook the Pasta
In a large pot, bring salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Add Cheese and Spices
Remove the saucepan from heat and add the sharp cheddar cheese, cream cheese, roasted poblano peppers, salt, black pepper, paprika, and garlic powder. Stir until the cheese is melted and the mixture is smooth.

Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and stir until well combined. Transfer to a greased baking dish.

Prepare Breadcrumb Topping
In a small bowl, combine the breadcrumbs and grated parmesan cheese. Sprinkle the mixture evenly over the mac and cheese.

Bake
Preheat the oven to 350°F (175°C). Bake the mac and cheese for 25-30 minutes, or until the top is golden brown and crispy.
