Prepare the Black Beans
In a small saucepan, heat the canned black beans over medium heat until warmed through. Season with salt and pepper to taste.

Cook the Eggs
In a skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy). Season with salt and pepper.

Warm the Tortillas
In another skillet, heat the remaining tablespoon of olive oil. Add the corn tortillas one at a time, warming for about 30 seconds on each side until pliable.

Assemble the Huevos Rancheros
Place two warm tortillas on each plate. Spoon the warmed black beans over the tortillas, followed by the cooked eggs. Top with salsa verde, a sprinkle of ancho chili powder, and crumbled queso fresco.
